Casseroles made from mashed turnips, sweetened potatoes, liver and carrots are the mainstay of the Finnish Christmas table. Just as traditional are potatoes, salt-cured fish, herring and rosolli or beetroot salad. In some parts of the country, Karelian hot pot is prepared from beef and lamb. Even so, for many people baked ham is the essential Christmas dish bar none, while others prefer turkey, reindeer or venison.
Whatever your evening meal plans are, our Christmas morning breakfast often includes rice porridge, gently flavoured with cinnamon. If you don’t find any on your Lapland trip, why not write down this recipe to try out at home!
2 dl round or short-grain rice
2 dl water
1/2 teaspoon of salt
1 l milk
(1 cinnamon stick)
Served with milk, cinnamon and sugar.
Boil the water in a saucepan. Add the rice and let it boil for about 5 minutes, stirring now and then. Add the milk and let the porridge simmer over medium heat for about 40 min. Remember to stir often. Add a pinch of salt.
The combination of milk, saucepan and oven is this author’s particular Achilles heel... Christmas morning wouldn’t be the same without rice porridge burnt to the pan!
